Ingredients
For the Chocolate Sponge
* 3 eggs
* 5 tablespoons sugar
* 3 tablespoons hot water
* 3 tablespoons all-purpose flour
* 3 tablespoons cocoa powder
* 1/2 packet baking powder
For the Sponge Soaking Syrup
* 50 ml milk
* 2 heaping tablespoons chocolate drink powder, instant cocoa mix, or instant coffee
For the White Cream Filling
* 600 ml milk
* 5 tablespoons sugar
* 6 tablespoons cornstarch
* 2 packets vanilla sugar
* 20 g white chocolate
* 150 g butter or margarine, softened
For the Chocolate Cream Topping
* 200 g dark cooking chocolate
* 100 g milk chocolate
* 500 ml heavy whipping cream

Instructions
Prepare the Chocolate Sponge
Preheat the oven to 180°C (350°F).
In a deep mixing bowl, beat the eggs until frothy. Gradually add the sugar and continue mixing until the mixture becomes pale, thick, and airy.
Pour in the hot water and mix briefly.
In a separate bowl, sift together the flour, cocoa powder, and baking powder. Add the dry ingredients to the egg mixture and mix on low speed until fully combined into a smooth batter.
Grease and lightly flour a 20×30 cm baking pan, or line it with baking paper.
Pour the batter into the prepared pan and spread evenly. Bake for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.
While the sponge is still warm, prepare the soaking syrup by mixing the hot milk with the chocolate powder or instant coffee. Pour evenly over the sponge to keep it moist and flavorful.
Prepare the White Cream Filling
Reserve a few tablespoons of the milk and use them to dissolve the cornstarch.
Pour the remaining milk into a тенџере and heat over medium temperature. Add the sugar and stir until dissolved.
Once the milk begins to simmer, add the dissolved cornstarch while stirring continuously. Cook for several minutes until the cream thickens.
Remove from heat and add the white chocolate. Stir until fully melted and incorporated.
Cover the cream with plastic wrap directly on the surface and allow it to cool completely.
Beat the softened butter separately, then gradually mix it into the cooled cream until smooth, light, and silky.
Spread the white cream evenly over the cooled sponge layer.
Prepare the Chocolate Cream
Heat the heavy cream over low temperature until very hot, but do not allow it to boil.
Remove from heat and add both types of chocolate, broken into small pieces. Let stand for one minute, then stir until smooth and glossy.
If desired, add 1–2 tablespoons sugar for a sweeter flavor.
Allow the chocolate cream to cool first at room temperature, then refrigerate for at least 2 hours.
You may use the cream as it is for a glossy finish, or whip it lightly with a mixer for a fluffier texture suitable for piping decorations.
Spread or pipe the chocolate cream over the white layer and decorate as desired.
Refrigerate the cake before serving for the best texture and flavor.
