Ingredients

For the Cake Batter

* 3 eggs
* 1 teaspoon salt
* 150 g sugar
* 150 ml oil
* 150 ml milk
* 300 g flour
* 15 g baking powder
* 75 g dried apricots
* 75 g walnuts
* 75 g frozen raspberries

For the Creamy Topping

* 1 egg
* 2 tablespoons thick yogurt (or sour cream)
* 1 tablespoon sugar
* 1 tablespoon cornstarch
* a pinch of vanilla

Instructions

1. In a deep mixing bowl, beat the eggs, salt and sugar with a mixer until the mixture becomes light, fluffy and creamy.

2. Pour in the oil and continue mixing briefly until fully incorporated.

3. Add the milk and mix again.

4. In a separate bowl, combine the flour and baking powder. Gradually add them to the wet ingredients, mixing until you get a smooth batter without lumps.

5. Chop the dried apricots and walnuts into smaller pieces.

6. Add the apricots, walnuts and frozen raspberries to the batter and gently fold everything together using a spatula.

7. Grease a baking pan measuring approximately 27×18 cm and pour the batter evenly into the pan.

Prepare the Topping

8. In a small bowl, whisk together the egg, thick yogurt, sugar, cornstarch and vanilla until smooth and creamy.

9. Spread the topping over the cake batter and, if desired, decorate with additional raspberries and walnuts.

10. Bake in a preheated oven at 180°C for about 35–40 minutes, or until the cake develops a beautiful golden color.

11. Allow the cake to cool before slicing so it stays soft and moist inside.
