The Secret to a Perfect Moist Walnut Cake with Syrup (Step-by-Step)
Walnut Syrup Sponge Cake (Grandma’s Recipe) – Moist, Fragrant & Irresistibly Rich
There’s something timeless about desserts that come straight from a grandmother’s kitchen.
This walnut syrup sponge cake is one of those comforting, heritage recipes—soft, aromatic, and soaked in a delicate citrus syrup.
It’s not quite baklava, nor semolina cake, but a perfect balance of both—making it a standout choice for anyone looking for a homemade dessert with a premium feel and unforgettable taste.
Ideal for family gatherings, festive tables, or even as a refined everyday treat, this cake delivers both simplicity and elegance in every bite.

Ingredients
For the Dough:
* 1 egg
* 260 g all-purpose flour
* 100 g semolina
* 200 ml yogurt
* 2 tbsp powdered sugar
* 50 ml olive oil (or neutral cooking oil)
* 1 tbsp butter or lard
* 10 g baking powder
* Zest of 1 lemon
* 1 tsp apple cider vinegar
For the Filling:
* 200 g ground walnuts
* 2 tbsp powdered sugar
* 2 tbsp sesame seeds (lightly toasted)
* 1 tsp ground cinnamon
* 1 tbsp sour cream
For the Syrup:
* 150 g sugar
* 100 ml water
* 1 whole mandarin (sliced, with peel)
* Juice of ½ lemon

Instructions
In a deep mixing bowl, whisk the egg until smooth. Add powdered sugar and butter, then gradually incorporate the sifted flour mixed with baking powder, semolina, yogurt, oil, lemon zest, and apple cider vinegar.
Mix until a soft dough forms, then transfer it onto a lightly floured surface and knead briefly until smooth.
Shape into a log. Set aside a small portion (about the size of a golf ball), then divide the remaining dough into two equal parts.
Roll out the first portion between two sheets of parchment paper into a thin layer sized to fit your baking pan. Transfer it to a greased baking dish and gently press it into place.
Prepare the Filling
In a bowl, combine ground walnuts, sesame seeds, cinnamon, powdered sugar, and sour cream. Add the reserved piece of dough and knead lightly until everything is well combined.
Roll out the filling in the same way and place it evenly over the first layer. Cover with the second rolled dough layer.
Gently smooth the surface and cut into desired portions before baking.
Bake
Bake in a preheated oven at 190°C (375°F) for approximately 45–50 minutes, or until golden brown.
Once baked, re-cut along the lines while still warm.
Prepare the Syrup
In a saucepan, combine sugar and water. Add sliced mandarin and lemon juice. Simmer briefly, then allow the syrup to cool.
Pour the syrup over the cooled cake (lukewarm syrup over a lukewarm cake works best). Let it absorb fully before serving.
