I’m a beginner cook, and I struggle with kneading dough, but when I discovered this recipe, I was fascinated by the look of the dough bun and the fact that the dough didn’t require kneading. The dough is easily formed with the hands after the ingredients are combined with a spoon. If it worked for me, you can trust me that it will work for everyone.
This “pizza-bread” is filled with grated cheese – typically mozzarella, although any pizza cheese would work. Of course, each person may customize it to their liking by adding other ingredients. This is what you require:
Ingredients required: 300 g of flour plus a little bit extra (2 and a half cups), 1 egg at room temperature, 3 tablespoons of oil, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 bag of dried yeast (8–10 g). 200 ml of warm or lukewarm milk (1 cup) and a handful of shredded cheese and feta (a ball about the size of an orange for the filling) are also required.
Preparation: Pour one bag of dried yeast into a large bowl with three tablespoons of oil, one tablespoon of sugar, one teaspoon of salt, and one cup of warm milk. Add the flour gradually as you continue mixing the ingredients until you get a smooth mixture.
You might need to add an additional tablespoon of flour after the 300 g have been added, to get the right consistency. The dough should be soft and sticky, not liquid or tough. Cover it with stretch foil and let it rise in a warm place for half an hour.
Prepare the filling next by grating and mixing the cheese, then form an orange-sized ball with your hands. You are free to fill it with more ingredients of your choice. Then, on a work surface that has been lightly sprinkled with flour, shape it into a ball with your hands and then flatten it to become thick.
After placing the cheese ball in the center, close the dough with your hands by sticking the ends of the dough together. Add some flour if your fingers start to stick. To make a disk shape and thick crust, flip the dough over so that the connected end is on the bottom. Then, gradually press down on the dough with your fingertips.
Spread it out slightly more with your hands to make it a little thinner before placing it on a tray, lined with baking paper. On top, brush with some egg yolk, then finish with more cheese.
